The PME straight edge icing ruler is an essential tool for coating cakes with Royal Icing.
This straight edge is made from high quality polished stainless steel and measures 16" (40.5cm) by 1" (2.5cm). It is firm so will not flex when in use ensuring a flat and even finish to your cake.
As well as for royal icing this tool can also be used for coating with buttercream or whipped ganache.
You can also use it as a guide for cutting straight pieces of paste.
When coating your cake top paddle the icing down using a palette knife to cover the top of your cake.
Hold the straight edge at each end and set at an angle on the surface of the icing then pull across the icing to remove the excess leaving the cake smooth and even. Repeat if necessary.
Do not press down too hard as you want to leave a good coat of icing on the cake.
