If you’re anything like me, then you love to find the perfect vegan baking recipes and use them as a base to make lovely customised cakes with different styles, flavours and personal touches.

I have gathered a few of my favourite vegan baking recipes here for you which are all perfect to be customised in whichever way you want using our flavouring and colour pastes!

Macarons

Crazy vegan Kitchens macarons is a recipe that I haven’t had the time to check out yet, but she explains very well how to master the art of aquafaba which is the vegan version of egg-whites.

This recipe is also perfect for people who suffer with an egg intolerance or allergy!

It’s a very customise-able recipe which goes perfectly with our Beau range for many exotic flavours as well as our Sugarflair range for lots of lovely colour pastes to compliment the flavour of your choice!

Vanilla sponge cake

If you read my blog about our traditional Norwegian cake that I made for our constitution day on the 17th of May. You will recognise this recipe.

Sweetie darlings recipe is absolutely gorgeous, very customise-able and a perfect base to do a lot of experimenting with!

This recipe gives a very light fluffy cake sponge which is perfect for light cakes!

Red Velvet cake

This is a recipe that I have altered and changed in so many ways and it’s by far my favourite go to when I want a rich and moist cake sponge.

It’s perfect for cupcakes as well!

I used this recipe in my Valentine blog where I made delicious red velvet cupcakes! The cocoa powder is this recipe is used to darken the red colour in the red velvet sponge.

If you are altering the colour to a brighter colour then make sure you don’t add the cocoa powder as it will darken the colour significantly and affect the outcome!

Chocolate cake

Who doesn’t love a rich, moist chocolate cake that melts on your tongue? I know I do!

Use this batter for cupcakes and throw in chopped up chocolate and you will get the richest, most delicious chocolate chip cupcakes.

This recipe can be found here, but it is from a Norwegian blog so I will translate the recipe for you here!

Cake sponge:
3 dl soymilk
1 dl sunflower oil
3 dl sugar
0,75 dl cacaopowder
A teaspoon vanilla sugar or vanilla extract
1 teaspoon baking powder
A small teaspoon baking soda
2 teaspoon applecider vinegar
5 dl fine plain flour.

  • Mix the oil and milk together in a bowl and mix in the rest of the ingredients. I sift the flour to avoid any lumps in the batter.
  • Pour the mixed batter into a greased tin or a tin covered with baking paper. The author of the blog uses a 10 inch tin for this recipe.
  • Bake the cake on 200 degrees for 20-30 minutes.
  • Use a cocktail stick or a knife to check when the cake is done.
  • If making cupcakes the baking time should be around 15-20 minutes, but check regularly to prevent them from drying out!

Cake filling:
3 dl vegan whip-able soy cream
100 g dark vegan chocolate(Bourneville is my favourite!)
1 teaspoon pulverised coffee powder (optional)
A pinch of salt.

  • Whip the soy cream for about a minute with an electric mixer.
  • Melt the chocolate and add it little by little while you stir it into the whipped cream.
  • Crust the coffee between 2 spoons before adding it and the salt to the mix and stir everything well together.

Once the cake has cooled down, cut it in half and fill it with your chocolate cake filling.

There should be enough filling to cover your whole cake if you wish to do so.

Keep refrigerated and cool and the cake will last for up to 3 days!

Galaxy glaze

The beauty of galaxy cakes is that you can use any sponge that you desire as the base of the cake.

If you take any of the above cake sponge recipes, alter them to your hearts desire, you can then follow this youtube video on how to get that lovely galaxy cake finish!

TOP TIP: The video is in German, so make sure that you enable captions when you watch it!

This is only a vegetarian recipe so you will need to make some alterations to make it vegan friendly.

I have put a link to a suitable vegan replacement for the condensed milk used in the video. To make the perfect Vegan baking Recipes.

Ingredients:
170g sugar
200g white vegan chocolate
11g Agar agar
145g water
115g sweet condensed vegan milk (Like this)
